This building in Daylesford dated back to the late 1800s, which meant we needed to address a number of issues before fitting it out for a new French restaurant with a full commercial kitchen. These issues included an antiquated floor with mud beneath it, flaky bricks and extremely primitive electrical work.
Our main focus on this project was to create new, strong foundations for the floor as the area was prone to flooding. This allowed us to build new flooring and create the space needed for a large grease trap. We also sealed the original brickwork, oversaw a complete upgrade of the power, and installed a new exhaust and air-conditioning system. Once all of these functional considerations were completed, we built the interiors for a contemporary and upscale restaurant, including bespoke lighting elements and extensive joinery.
